This has always been one of my favorite things to eat. The best I have ever had was at the restaurant inside the aquarium in New Orleans about 30 years ago. Now that I am trying to learn & cook more while we are at the cabin, I decided to make some for the first time ever. Sure glad I did…:it came out great. Kim had this recipe that she got from someone many years ago. I pretty much went by that with a couple of tweaks. Put all the ingredients in a pot & cook on low for around 2 hours. Stir all through that time to keep it from boiling. In a separate pot towards the end, make your rice. Put your rice in a bowl & pile the rest on top & enjoy.
Ingredients:
4 15oz cans of chili beans rinsed
1 onion chopped
2 bell peppers chopped
1 celery chopped
1 jalapeño chopped
1 tsp salt
1 tsp pepper
1/2 tsp minced garlic
1/2 tsp oregano
1/2 tsp cayenne pepper
1/2 tsp Cajun seasoning
1 pack of andouille sausage sliced
2 cartons of beef broth
